4 Salmon Supremes 2 tbs Sultanas Plain Flour 14 fl oz Olive Oil 1 Onion (chopped) 2 Cloves Garlic Salt and Pepper 1 Celery Stalk 2 tbs Pine Nuts 1 tbs Salted Capers 55g (2oz) Green Olives (stoned) 454g (1lb) Tinned Tomatoes 2 Bay Leaves

| Instructions: |
Defrost the salmon supremes in the refrigerator for 6 hours or overnight.
Soak the sultanas in warm water for 15 minutes and strain before using.
Coat the defrosted supremes lightly with flour and shallow fry in very hot oil until browned on both sides.
Drain the supremes on kitchen paper. Strain the oil when it has cooled and use half to fry the chopped onion, garlic, celery, pine nuts and sultanas.
Add the rinsed capers, olives, crushed tomatoes and allow to simmer.
Place the fish in an ovenproof dish and pour the tomato sauce over them. Add the bay leaves and salt and pepper.
Bake in the oven at 200°C/400°F, Gas Mark 6, for 10-15 minutes. Serve hot.
